  • 2 tablespoons honey, preferably local

Instructions

  1. Prepare the Watermelon: Cut the seedless watermelon into 1-inch cubes. If using watermelon with seeds, remove as many as possible.
  2. Prepare the Strawberries: Wash the strawberries thoroughly, hull them, and slice them into even slices, about 1/4 inch thick.
  3. Chop the Herbs: Wash and dry the mint and basil leaves. Finely chop both the mint and basil.
  4. Make the Dressing: In a small bowl, whisk together the fresh lime juice and honey until well incorporated.
  5. Season the Dressing: Season the dressing with sea salt and freshly ground black pepper. Adjust to taste.
  6. Combine Fruit and Herbs: In a large bowl, gently combine the cubed watermelon, sliced strawberries, chopped mint, and chopped basil.
  7. Drizzle with Dressing: Pour the lime juice and honey dressing over the fruit mixture. Gently toss to coat evenly.
  8. Chill the Salad: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes before serving (or up to a few hours).
