For the Baked Feta Pasta:
- 2 Pints cherry tomatoes
- 1/2 Cup olive oil (extra-virgin)
- 1 Block feta cheese (8-Ounce)
- 1 Teaspoon oregano (dried)
- 1 Teaspoon salt
- 1/2 Teaspoon black pepper (freshly cracked)
- 2 Teaspoon garlic (minced)
- 8 Ounces pasta (uncooked weight)
- 8 basil leaves (fresh)
- 1/4 Cup parsley (fresh)
- 1 Teaspoon red pepper flakes (or to taste, optional)
Instructions
- Preheat: Preheat the oven to 400°F.
- Add: Put the cherry tomatoes in a casserole dish.
- Sprinkle: Add the feta cheese in the middle and sprinkle the oregano, salt, and pepper over the cheese.
- Pour: Pour the olive oil over the tomatoes and cheese and toss the tomatoes to coat.
- Bake: Bake in the oven for 40 minutes.
- Cook: Meanwhile, cook the pasta according to the package directions. Drain, saving a little of the pasta water for the recipe.
- Mash: Remove and mash the melted cheese with the tomatoes and mix in the minced garlic, stirring to combine.
- Thin: If the sauce is thick, add a couple tablespoons of pasta water to thin it out.
- Sprinkle: Sprinkle the basil and parsley over the cheese and add the pasta.
- Combine: Stir to combine and sprinkle with red pepper flakes if liked. Serve hot.
