  • 1 Block feta cheese (8-Ounce)
  • 1 Teaspoon oregano (dried)
  • 1 Teaspoon salt
  • 1/2 Teaspoon black pepper (freshly cracked)
  • 2 Teaspoon garlic (minced)
  • 8 Ounces pasta (uncooked weight)
  • 8 basil leaves (fresh)
  • 1/4 Cup parsley (fresh)
  • 1 Teaspoon red pepper flakes (or to taste, optional)

Instructions

  1. Preheat: Preheat the oven to 400°F.
  2. Add: Put the cherry tomatoes in a casserole dish.
  3. Sprinkle: Add the feta cheese in the middle and sprinkle the oregano, salt, and pepper over the cheese.
  4. Pour: Pour the olive oil over the tomatoes and cheese and toss the tomatoes to coat.
  5. Bake: Bake in the oven for 40 minutes.
  6. Cook: Meanwhile, cook the pasta according to the package directions. Drain, saving a little of the pasta water for the recipe.
  7. Mash: Remove and mash the melted cheese with the tomatoes and mix in the minced garlic, stirring to combine.
  8. Thin: If the sauce is thick, add a couple tablespoons of pasta water to thin it out.
  9. Sprinkle: Sprinkle the basil and parsley over the cheese and add the pasta.
  10. Combine: Stir to combine and sprinkle with red pepper flakes if liked. Serve hot.
