- 2 pounds baby potatoes

- 2 Tablespoons butter
- 3 Tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon sea salt
Toppings:
- 1 cup shredded cheddar cheese
- ½ cup bacon bits
- sour cream
- chopped fresh parsley or chives (for garnish)
Instructions
- Cook the Potatoes: In a large pot of salted boiling water, cook the potatoes until tender, about 15-20 minutes or until fork-tender. Drain off water.
- Preheat the Griddle: Preheat your Blackstone griddle to medium-high heat.
- Season the Potatoes: In a large bowl, combine the olive oil, garlic powder, and salt. Add in the potatoes and toss until all are coated with the oil.
- Smash and Cook: Melt the butter on the griddle and spread it out. Arrange the potatoes in a single layer. Using your griddle spatula or burger press, smash the potatoes. Cook for 5 minutes. Flip the potatoes, sprinkle the cheese and bacon bits on top, and cook for another 5 minutes or until the cheese melts.
- Serve: Remove from the griddle and serve immediately.
