Potatoes:
- 2.5–3 lbs Yukon Gold potatoes (thinly sliced)
Cheese Sauce:
- 1/4 cup butter
- 1 medium onion (diced)
- 8–10 cloves garlic (minced)
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 cup chicken broth
- 1/2 teaspoon dried thyme
- 1 teaspoon salt
- 1 cup cheddar cheese (shredded)
- 1 cup mozzarella cheese (shredded)
- 3/4 cup Parmesan cheese (grated)
Instructions
- Preheat the oven: Preheat the oven to 350°F.
- Prepare the potatoes: Scrub and thinly slice the Yukon Gold potatoes.
- Make the cheese sauce: In a medium saucepan, melt butter, sauté onion and garlic, add flour, milk, chicken broth, thyme, and salt. Cook until thickened.
- Combine with cheese: Remove from heat and mix in the shredded cheeses until well combined.
- Layer the potatoes: Grease a casserole dish and layer potatoes and cheese sauce three times.
- Bake: Cover with foil and bake for 30 minutes, then bake uncovered until golden and tender.
