- 1 yellow onion, halved and thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
For the Vegetables:
- 1 1/4 pounds boneless skinless chicken breasts, thinly sliced
- 1 1/2 teaspoons Italian seasoning
- 1/2 teaspoon smoked paprika
- Kosher salt and fresh ground black pepper to taste
For the Chicken:
- 2 tablespoons olive oil, divided
- 1 cup shredded provolone cheese

Instructions
- Sauté the Vegetables: Heat a tablespoon of olive oil in a large skillet over medium-high heat. Sauté the peppers, onion, salt, and pepper until tender. Remove from skillet.
- Cook the Chicken: Add remaining oil to the skillet. Cook chicken with seasonings until browned and cooked through. Add back the vegetables and stir.
- Add Cheese: Top with provolone cheese. Cover until melted. Serve hot.
