For the Toffee:

  • 1 cup pecans or walnuts, chopped
  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ½ tsp kosher salt
  • 1 tsp vanilla extract

For the Topping:

  • 1 cup milk chocolate chips
  • 1 cup semi-sweet chocolate chips

Instructions

  1. In a large saucepan, combine butter, sugar, and salt. Cook over medium heat, stirring constantly until the mixture is melted together, approximately 5 minutes.
  2. Line a 9×13 baking dish with parchment paper, making sure it covers the ends for easy removal.
  3. Allow the mixture to come to a boil.
  4. Cook the mixture, stirring occasionally until it reaches a dark amber color and a candy thermometer reads 285°F, about 20-25 minutes.
  5. Pour the toffee mixture into the prepared dish. Sprinkle chocolate chips on top, let them soften, then spread into a smooth layer.
  6. Top with chopped nuts, refrigerate for 1-2 hours until set.
  7. Remove from dish, break into pieces, and enjoy!
