For the Toffee:
- 1 cup pecans or walnuts, chopped
- 1 cup unsalted butter
- 1 cup granulated sugar
- ½ tsp kosher salt
- 1 tsp vanilla extract
For the Topping:
- 1 cup milk chocolate chips
- 1 cup semi-sweet chocolate chips
Instructions
- In a large saucepan, combine butter, sugar, and salt. Cook over medium heat, stirring constantly until the mixture is melted together, approximately 5 minutes.
- Line a 9×13 baking dish with parchment paper, making sure it covers the ends for easy removal.
- Allow the mixture to come to a boil.
- Cook the mixture, stirring occasionally until it reaches a dark amber color and a candy thermometer reads 285°F, about 20-25 minutes.
- Pour the toffee mixture into the prepared dish. Sprinkle chocolate chips on top, let them soften, then spread into a smooth layer.
- Top with chopped nuts, refrigerate for 1-2 hours until set.
- Remove from dish, break into pieces, and enjoy!
