Delicious and healthy baked oatmeal bars that are perfect for a quick breakfast or snack. These bars are vegan and can be customized with your favorite mix-ins like chocolate chips or nuts.

Mashed Banana:
1 1/3 cup
Water:
6 tbsp
Salt:
1/2 tsp
Pure Maple Syrup, Agave, or Honey OR Stevia Equivalent:
3 tbsp
Oil, Nut Butter, or Additional Water:
3 tbsp
Pure Vanilla Extract:
1 tsp
Optional Mix-ins:
Chocolate chips, chopped nuts, etc.
Instructions
- Preheat the oven: Preheat the oven to 350°F. Line an 8-inch pan with parchment paper or grease it well.
- Mix ingredients: In a mixing bowl, combine all the ingredients. Mix well and then smooth the mixture into the prepared pan.
- Add toppings: Optionally, sprinkle chocolate chips on top of the mixture if desired.
- Bake: Bake for 20 minutes. After baking, without opening the oven door, turn off the heat and let the bars sit in the closed oven for an additional 5 minutes.
- Slice and serve: Remove from the oven, slice into bars, and enjoy! Leftover bars can be stored in the refrigerator for 3-4 days or frozen for longer preservation.
