Pasta:
- 2 servings pasta
- 1/4 cup pasta cooking water
Shrimp:
- 1/2 lb jumbo shrimp (peeled, raw or pre-cooked)
- 1/2 cup boiling water
- 1/4 chicken stock cube
- 2 Tbsp butter
- 2 Tbsp olive oil
- 2 garlic cloves (minced)
- 1/2 tsp fine table salt
- 1/4 tsp paprika powder
- 1/4 tsp red chili pepper flakes (adjust to taste)
- 1/4 tsp ground black pepper
- 1 Tbsp fresh squeezed lemon juice
- 1/4 cup chopped parsley
Instructions
- Cook the pasta: Boil pasta in salted water until al dente, reserving some cooking water.
- Dissolve chicken stock: Dissolve stock cube in boiling water.
- Prepare the sauce: Melt butter and oil, sauté garlic, then add stock, salt, paprika, chili flakes, and black pepper. Simmer until thickened.
- Cook the shrimp: Add shrimp, cook until pink.
- Finish the dish: Mix in lemon juice and parsley. Toss in pasta and cooking water, simmer briefly before serving.
Notes
- You can adjust the spice level by adding more or less chili flakes.
- For a burst of freshness, consider adding a touch of lemon zest before serving.
