Shrimp:

  • 1/2 lb jumbo shrimp (peeled, raw or pre-cooked)
  • 1/2 cup boiling water
  • 1/4 chicken stock cube
  • 2 Tbsp butter
  • 2 Tbsp olive oil
  • 2 garlic cloves (minced)
  • 1/2 tsp fine table salt
  • 1/4 tsp paprika powder
  • 1/4 tsp red chili pepper flakes (adjust to taste)
  • 1/4 tsp ground black pepper
  • 1 Tbsp fresh squeezed lemon juice
  • 1/4 cup chopped parsley

Instructions

  1. Cook the pasta: Boil pasta in salted water until al dente, reserving some cooking water.
  2. Dissolve chicken stock: Dissolve stock cube in boiling water.
  3. Prepare the sauce: Melt butter and oil, sauté garlic, then add stock, salt, paprika, chili flakes, and black pepper. Simmer until thickened.
  4. Cook the shrimp: Add shrimp, cook until pink.
  5. Finish the dish: Mix in lemon juice and parsley. Toss in pasta and cooking water, simmer briefly before serving.
