Indulge in this guilt-free, Healthy Cookie Dough Bark that combines the flavors of cookie dough and chocolate in a delightful frozen treat.
Ingredients
Cookie Dough:
- 1 cup almond flour
- 1 cup oat flour
- 1/4 cup creamy drippy peanut butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- Pinch of sea salt
- 1/2 cup mini chocolate chips
Chocolate Layer:
- 2/3 cup dark chocolate chips
- 1 teaspoon coconut oil
- Flaky sea salt (optional for topping)
Instructions
- Line a baking sheet with parchment paper.
- Press the cookie dough mixture into the lined pan.
- Melt the dark chocolate and coconut oil.
- Spread the melted chocolate over the cookie dough.
- Freeze until set.
- Cut and serve.
In a medium bowl, combine all cookie dough ingredients except the mini chocolate chips. Gently fold in the mini chocolate chips, being careful not to overmix.
Shape it into a rectangle about 12 inches long, 8-10 inches wide, and 1/2 inch thick. Chill in the freezer for 15 minutes until firm.
In a microwave-safe bowl, heat the dark chocolate chips and coconut oil in 30-second intervals until fully melted.
Work quickly to spread the chocolate evenly over the chilled cookie dough. Drizzle any extra chocolate over the top and sprinkle with flaky sea salt if desired.
Return the bark to the freezer until the chocolate layer is firm, about 15 minutes.
Transfer the bark to a cutting board, peel off the parchment paper, and cut into pieces. Enjoy!
