  • 1 tablespoon honey
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon ground cumin
  • 1 tablespoon chopped fresh cilantro
  • Salt and freshly ground black pepper to taste
  • Avocado Corn Salsa:

  • 1 cup grilled fresh corn or defrosted frozen corn
  • 1 avocado (peeled and diced)
  • 1 jalapeño (seeds and vein removed and finely diced)
  • 1 tablespoon chopped cilantro
  • 1/2 of a lime (juiced)
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper to taste
  • 2 cups cooked rice
  • Crumbled queso fresco or cotija cheese
  • Lime wedges and cilantro for garnish

Instructions

  1. Honey Chipotle Chicken: Whisk together olive oil, chipotle, adobo sauce, lime juice, honey, garlic powder, cumin, cilantro, salt, and pepper. Marinate chicken in the mixture for 1-4 hours. Grill chicken until internal temperature reaches 165°F.
  2. Avocado Corn Salsa: Combine corn, avocado, jalapeño, cilantro, lime juice, cumin, salt, and pepper in a bowl; mix well.
  3. Assembling the Bowls: Divide rice into bowls, top with chicken, salsa, and cheese. Garnish with cilantro and lime wedges.
