  • 1 zucchini (thinly sliced)
  • 1/2 cup cherry tomatoes (cut in half)
  • 1/2 medium yellow onion (diced)
  • 1/3 cup kalamata olives (pitted)
  • 1/2 cup jarred roasted red peppers (thinly sliced)

Cheese and Garnish:

  • 1/2 cup mozzarella (grated)
  • 1/2 cup feta (crumbled)
  • 1 Tbsp fresh parsley (for garnish)
  • Kosher salt and fresh ground pepper to taste

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees F.
  2. Prepare Chicken: Slice the chicken breasts horizontally, drizzle with 1 Tbsp of olive oil, and season with garlic powder, oregano, salt, and pepper.
  3. Assemble: Transfer the chicken to a 9×13-inch baking dish, top with vegetables, season again, and drizzle with remaining olive oil.
