- 1 tsp dried oregano

- 1 zucchini (thinly sliced)
- 1/2 cup cherry tomatoes (cut in half)
- 1/2 medium yellow onion (diced)
- 1/3 cup kalamata olives (pitted)
- 1/2 cup jarred roasted red peppers (thinly sliced)
Cheese and Garnish:
- 1/2 cup mozzarella (grated)
- 1/2 cup feta (crumbled)
- 1 Tbsp fresh parsley (for garnish)
- Kosher salt and fresh ground pepper to taste
Instructions
- Preheat Oven: Preheat the oven to 400 degrees F.
- Prepare Chicken: Slice the chicken breasts horizontally, drizzle with 1 Tbsp of olive oil, and season with garlic powder, oregano, salt, and pepper.
- Assemble: Transfer the chicken to a 9×13-inch baking dish, top with vegetables, season again, and drizzle with remaining olive oil.
