Description
This Sausage and Veggies Skillet is a quick and easy one-pan meal that packs a punch of flavor with cajun sausage, colorful bell peppers, zucchini, and sweet corn. A perfect dish for busy weeknights!

Sausage:
- 12 oz sausage (cooked, such as cajun sausage, andouille sausage, or smoked sausage)
Veggies:
- 2 cups corn kernels (from 3 ears completely cooked)
- 1 tablespoon olive oil
- 1 large red bell pepper, diced
- 1 large zucchini, sliced
- 1/2 teaspoon chili powder
- Fresh cilantro, chopped
Instructions
- Cook sausage: Heat olive oil in a cast-iron skillet on medium heat. Slice cooked sausage into coins and add to the skillet. Cook for 5 minutes on one side, then flip and cook for 3 minutes on the other side. Remove from skillet.
- Prepare veggies: In the same skillet, cook bell pepper for 4 minutes, then transfer to the plate. Cook zucchini for 3 minutes. Slice corn off the cob.
- Assembly: Combine sausage, bell pepper, zucchini, and corn in the skillet. Mix well, add reserved oil, and chili powder. Reheat on low heat. Top with cilantro.
